Blueberry Vinegrette

Ingredients
1/2 Cup Blueberry Preserves2 TBS Dijon Mustard2 TBS Balsamic Vinegar1/4 Cup Extra Virgin Olive Oil1/4 Cup WaterFew turns of black pepper
Directions
With Whisk mix preserves, vinegar, mustard and water. Whisk in oil. Add a few turns of fresh black pepper to taste. Serve or refrigerate in shaker container. This makes about 1 1/4 cups dressing. A serving would be 2 TBS.
