Fancy Brunch Potatoes - with asparagus

1.5 cup diced russet potatoes -- I use frozen1 cup trio of peppers cut into strips -- also frozen10 stems asparagus -- steamed or roasted and cut into 1 inch slices1 tbsp butter1 tbsp olive oil2 large eggssalt/pepper to taste
In a medium saute pan over med-high heat melt 1 tbsp butter and add potatoes. Cook for 5-7 minutes until they begin to brown. salt to taste
Add 1 T oil and peppers, saute just until softened (2-3 minutes.
Add asparagus and saute just until heated through, add salt and pepper if desired, remove potatoes and vegetables to serving plates.
Add eggs to the same pan and cook to desired doneness (I like over-easy for this). Serve with an egg on top of the potatoes so you can break the yolk over them.
