Spinach and Cheese Ravioli with Tomato Basil Sauce

For Ravioli:12 oz package Wonton Wrappers1 package of frozen spinach (thawed and drained)1 cup 1% cottage cheese 1 cup part skim milk Mozzarella Cheese1/2 cup grated Parmesean Cheese1 tbs EVOO1/2 cup minced onion2 cloves of garlic, mincedTomato Basil Sauce:2-28 oz can crushed tomatoes1 medium onion, chopped6 cloves of garlic, minced4 tsp dried basilSalt and Pepper to taste
For Ravioli Filling:
Begin by sauteeing minced garlic and onion in EVOO. Meanwhile, drain liquid off of cottage cheese and then mash with a fork or put in a food processor. If using the processor, add to it shredded mozerella cheese and parmesean cheese. Pulse until everything is combined. Add cheeses to a mixing bowl. Add thawed, drained spinach and garlic and onions. MIx well. Add 1 tbs of mixture to each wonton wrapper and then cover with another wonton (tip: use water to wet edges of ravioli and then smash edges with a fork to seal). Drop Ravioli into boiling water and cook for 3-5 minutes.
To make the sauce:
Begin by sauteeing garlic and onion in EVOO. Once veggies are translucent, add the crushed tomatoes, basil, Salt and Pepper. Simmer on medium low for 15 minutes.
Combine sauce and Ravioli. Makes 6 servings, about 4 ravioli's each.
