Mom's Jambalaya

2 cloves garlic2 Tbsp olive oil1 C bell pepper, chopped coarsely1 C celery, chopped1 medium onion, chopped coarsely1 lb chicken breast, bone and skin removed, cut into bite-sized pieces8 oz Smart Chicken Italian Sausage (can use turkey Italian sausages instead)1 can diced tomatoes, no salt added1 1/2 C frozen sliced frozen okra (unbreaded)1 can reduced sodium chicken broth1 C reduced sodium tomato juice2 tsp creole seasoning1 tsp Tabasco sauce2 C brown minute rice, uncooked1 lb peeled deveined shrimp, tails removed
In a small skillet prepared with cooking spray, prepare 2 of the chicken (or turkey) sausages according to package instructions.
Meanwhile, heat a large skillet over medium-high temperature. Add olive oil and garlic. Saute briefly.
Add chicken. Cook until chicken starts to brown. Add onion, celery, bell pepper. Cook until color of the pepper begins to brighten.
Lower heat to a simmer. Add tomatoes with juice, tomato juice, okra, chicken broth, creole seasoning, and Tabasco. Cook for about 15 minutes, or until chicken is cooked through. (While the concoction is simmering in the skillet, take the cooked sausages and cut into thin coins.)
Add rice and sausage. Cook an additional 5 minutes.
Turn off heat. Add shrimp. Cover and let stand an additional 2 to 3 minutes, or until shrimp are pink.
More Tabasco sauce may be added for more heat, if you prefer.
One serving is approximately 2 cups.
