Vegetable Tray Soup

Ingredients
2-3 Tbsp EVOO1 cup celery, diced1/2 cup carrots, diced1 head of cauliflower, cut into small pieces1 can chicken broth1 pkg Ranch dressing mix3 Tbsp dried onion flakes2-3 cups water
Directions
Heat dutch oven over medium heat. Add EVOO, celery, and carrots to dutch oven and saute for 3-5 minutes until celery is soft. Add cauliflower and continue to cook for another 5 minutes. Pour chicken broth and water into mixture and add onion flakes and ranch dressing mix. Bring to a boil and then reduce heat to simmer for 25-30 minutes. At this point, you can use a submersion blender to puree or you can serve as is.
