Vicki's Classic Potato Salad Redone

6 medium potatoes (2 lbs) 1/2 cup finely chopped onion 1/3 cup dill pickles, finely chopped 1 1/4 cups fat free mayonnaise 2 teaspoons Equal 2 teaspoons celery seeds 2 teaspoons vinegar 2 teaspoons mustard 1 1/2 teaspoons salt 4 eggs, yolk removed, hard-boiled, coarsely chopped
1. In a covered saucepan cook potatoes in boiling, salted water for 25-30 minutes or until tender. Drain well.
2. Peel and cube potatoes and transfer to a large bowl.
3. Add onion and egg whites.
4. Combine mayo, Equal, celery seed, vinegar, mustard, salt, and pickles.
5. Pour over potato mixture and toss to coat. Cover and chill.
6. Better the second day.
