Ham and Bean Crock Pot Soup

1 cup navy beans (dried)1/2 cup chopped celery2-3 carrots, chopped (or 8 oz. baby carrots)1/2 cup chopped onion6 oz. smoked ham (diced into 1" squares)4 cups vegetable broth2 tsp. olive oil1 T. thymeSalt and pepper to taste
Makes 4 1 1/2 cup servings
Soak dried beans in water overnight in a covered pan (water should be at least 2" higher than beans). The next morning, drain beans, rinse thoroughly and set aside. Brown onions and celery in olive oil, stirring in thyme. Once browned, add onions and celery mixture along with all remaining ingredients to crock pot and cook for 8 hours on low. Serve with good fresh bread.
