Peanut Chicken and Vegetables

1.5 lb chicken1 red pepper, chopped1 cup green beans1 cup light coconut milk1 T fish sauce (or 1 t salt)1 packet A Taste of Thai Peanut Sauce Mix
Spray a large skillet with nonstick spray
Add chicken, vegetables, and fish sauce. Sauté for 3 minutes.
Add Coconut Milk and Peanut Sauce Mix. Bring to a boil while stirring and boil 3 minutes.
Notes:
- the Taste of Thai package recommends adding noodles to make the dish a stir-fry, but I left them out to lower the calorie count
- The package also recommends using two packs of peanut sauce mix, but I only used one with some extra spices. Spices you may want to try are coriander, Thai chili powder, galangal, green peppercorns, lemongrass, and turmeric.
