Fire Roasted Chicken Escondido

1 lb chicken breasts, boneless & skinless15 oz can black beans, drained2 cups fire roasted salsa (find recipe in this cookbook) or your favorite salsa.1/3 cup sundried tomatoes2 cloves garlic2 tsp dried oregano4 tbsp olive oil2 tbsp balsamic vinegar1 tbsp lime juice6 cups spanish rice (cooked) (recipe in this cookbook)
Cut chicken into bite-sized pieces and place into a bowl. Mix in 2 tbsp olive oil, oregano and lime juice. Let stand for approximately one hour or more if desired.
Saute' tomatoes and garlic in olive oil and vinegar until tender. Add chicken and cook until done. Add salsa and black beans and then simmer 10 minutes.
Serve over spanish rice.
This will yield approximately 10 1-cup servings
