whole wheat honey pancakes with blueberries

Pancakes3/4 cup whole wheat1 1/2 tsp baking powder1/4 tsp salt2 tsp honey1/2 an egg1/2 cup 2% milkvanilla Sauce1/2 cup blueberries2 Tbs water2 Tbs. maple syrup
Makes enough pancakes for you to share with your sweetheart.....
Mix wet ingredients to dry and combine until just incorporated. Let sit 10 minutes to soften the whole wheat.
Place berries, syrup and water in a small saucepan and bring to a gentle boil...reduce liquid by 1/2 (about 2 minutes)
Preheat non-stick pan on med heat (very important as there is no fat added to pan). Use spoon/scoop to cook 4 similar sized pancakes (usually 2 at a time in a largeish pan) ~ I use an ice cream scoop to evenly portion the cakes.
Cook until bubbles start to form and then flip cakes.
Serve with hot blueberry syrup.
