Beef Roll-Up with Artichokes and Sundried Tomatoes

Ingredients
8 oz very thinly cut sirloin1/2 cup frozen artichoke quarters1/4 cup sundried tomatoes, sliced into thin strips2 slices provolone cheese1 tbsp minced garlicsalt and pepper to taste
Directions
Pound out the beef to about 1/4-1/2 inch thick. Pour vinegar over the beef and rub with garlic on both sides. If you have time, you can let the beef marinate for anywhere from 30 minutes to several hours, but it still tastes great if you just make it without marinating for any length of time. Take the beef and sprinkle with salt and pepper on both sides. Place the cheese slices on the beef, then place artichokes along a line down the center. Sprinkle the tomatoes over the artichokes. Try to centre the filling to leave about 1/2 inch along the sides of the meat. Roll it up carefully and secure with toothpicks or backing string. Bake at 350 degrees Fahrenheit for 30-35 minutes.
