Ingredients
Chicken Thigh, boneless, and skinless, 4 oz/Soy Sauce, .25 cupDole Pineapple Tidbits 100% Pineapple juice, 0.5 cup
Directions
NOTE: While this serves 1, just repeat recipe with each individual chicken thigh to make as any as you like.

Marinade chicken thigh in pineapples with juice and soy sauce.

Grill thigh on hottest part of the grill on each side for about a minute. Turn down heat (or move to cooler part of the grill) and grill until internal temp reaches 160 degrees. Baste with remaining marinade.

Makes 1 thigh.

    I thought this recipe was pretty good, very easy. I took the pineapple bits and wrapped them in tin foil and threw them on the grill then put them over the chicken and some brown rice. I also added some ginger for seasoning. Next time I would use chicken breasts instead of thighs. - 7/20/07

    This was great to use some leftover fruit and vegetables from yesterday's barbeque! I used skinless chicken tenders, low sodium soy sauce, pineapple juice and some ground ginger. I then put the chicken, fruit & veggies on wooden skewers (soak them in water first) and after marinating, grilled them. - 7/6/07

    I don't think the nutritional info is correct. You are not consuming all the soy or pineapple juice. It's only a marinade. Therefore the numbers would be much less. Think about it. - 7/3/07

    My entire family loved this!! I chopped up chicken breasts into small bite size pieces, used about 1/2 the amount of soy, used pineapple chunks instead of bits and added some minced garlic. This was so easy to make and cooked in about 5 minutes on the stove. I will definitely be make this again! - 6/14/07
