eggs and veggies with salsa

Ingredients
Directions
1 large egg2 egg whites1 TB milk1/4 c green pepper chopped1/2 medium onion chopped1/2 cup sliced fresh mushrooms1 oz shredded mozzarella cheese4 TB salsa
Spray a skillet with cooking spray and saute peppers, onions, and mushrooms until mushrooms are moist and tender. Blend egg, egg whites and milk together and add to pan. Scramble all. Top with cheese and allow to melt. Serve with salsa. Also goes great with whole wheat bread or tortillas.
