Ingredients
Broccoli, fresh, 3 stalk (remove)Carrots, raw, 6 medium (remove)Onions, raw, 1 large (remove)Mushrooms, fresh, 2 cup, whole (remove)Spinach, frozen, 1.6 package (10 oz) yields (remove)*Coconut Milk, 2 cup (remove)Chicken Broth, 4 cup (8 fl oz) (remove)Ginger Root, 4 slices (1" dia) (remove)Garlic, 6 clove (remove)Cilantro, dried, 1 tbsp (remove)Bay Leaf, 1 tbsp, crumbled (remove)*Crushed Red Pepper, 2.5 tsp (remove)
Directions
Place all ingredients in a large stockpot and cook for 40-45 minutes or place all in a crockpot and cook on high for about 6 hours. Puree with a stick blender. Makes 10 servings.
