Deviled Swiss Steak (diabetic friendly)

Ingredients
2 lbs beef round, cut 1 inch thick2 tsp dry mustard1 tsp salt1/4 tsp pepper2 tbsp olive oil4 oz can of mushroom stems and pieces1 tbsp worchestershire sauce
Directions
Trim any excess fat from meat and remove any bone. cut meat in to 8 serving pieces. Mix dry mustard, salt and peper and sprinkle over meat to coat. Pound seasonings into both sides of meat with a meat hammer. Heat oil in skillet over medium heat. quickly brown meat on both sides. Remove from heat and spoon off any excess fat. Drain mushrooms reserving liquid. add water to liquid (if necessary) to make 1/2 cup add worchestershire sauce. pour liquid mixture over meat. Cover and simmer 1 1/2 to 2 hours or until meat is tender. Add Mushrooms and heat through. Transfer meat to platter and skim any fat out of pan juices; pour remaining juices and mushrooms over meat and serve.

    This is an excellent main dish. I did omit the salt, since you get that from the worcesteshire sauce. Add a vegetable side dish, and you have a complete meal. I'll definitely make this again. - 8/2/10
