Dow's Thai Beef Salad

Beef1 lb. flank steak or other tender cut, cut into strips6 cloves garlic (the more the better!), minced or crushed2 tbsp vegetable oilDressing1/4 cup fish sauce1/4 cup lime juice (approx. 1 lime, or you can use bottled)2 tbsp + 2 tsp Splenda1 clove garlic, minced or crushedSalad1 head green leaf lettuce, washed and torn into pieces1 or 2 cucumbers, sliced and seeds removed1 or 2 tomatoes, cut into thin slices1/2 cup cilantro, chopped1/2 of a medium red onion, sliced thinly
Combine dressing ingredients.
Stir fry garlic in oil over medium heat. Add beef and cook until done. Add any liquid from cooking to the dressing mixture.
Toss with remaining ingredients, tossing in the dressing last.
Makes 4 servings, each with 4 oz. beef. and approx. 2-3 tablespoons dressing.
