Tofu Madras

1 Tomato, diced1 onion, diced4 tbsp madras paste1 block tofu, sliced2 tbsp vegetable oil3/4 cup water4 cups rice
Directions
brown onions in oil, add tofu and madras paste. Add tomato and water. simmer 20 minutes. serve over rice.
