Coconut Kashi Cookies

3 egg whites1 1/4 cup white sugar1/4 tsp salt1/2 tsp vanilla2 1/2 cup flaked coconut1 1/2 cup Kashi GoLean Crunch Cereal
- Preheat oven to 325*.
- Beat egg whites until stiff.
- Stir in sugar, salt, & vanilla.
- Blend coconut & cereal and add to egg white mixture.
- Drop by teaspoonfuls on ungreased parchment paper.
- Bake for 15-18 minutes.
- Makes 36 cookies (depending on how big you make them, of course.)
