Carrot & Coriander Soup

Ingredients
1 Kg Carrots, peeled and chopped1 medium onion, peeled and chopped1 Chicken stock cube1 tbsp dried coriander leaf (or to taste)
Directions
Place all items in a lagre pot, add water to cover all ingredients by about 1cm. Bring to the boil and then cover and simmer for 30 minutes or until carrots well cooked and tender. Remove from the heat and allow to cool then blend, refrigerate and serve as needed.
