1/2 cup butter, softened1 banana, mashed1/4 cup unsweetened applesauce1 tsp. vanilla extract1/2 cup brown sugar1/2 cup flour1/2 cup whole wheat flour1/4 tsp. salt1 tsp. baking powder2 1/2 cups rolled oat flakes1 cup chopped walnuts1/2 cup dried fruit (I use chopped dates)
Preheat oven to 350 degrees. In a large bowl, stir together the butter, banana, applesauce, vanilla, and brown sugar. Add the flours, salt, baking powder, rolled oat flakes, walnuts, and dates. Dough will be stiff. Spoon a heaping tablespoon of dough onto a cookie sheet and press flat with your fingers. Bake for 12-14 minutes or until golden. Makes approximately 31 cookies. Serving Size= One Cookie.
