Zuccini Hummus

Ingredients
1 medium zuccini, washed and chunked (1 cup)2 Tablespoons tahini2 Tbs fresh lemon juice1/4 tsp each: cumin, paprika1 garlic clove (or 1tsp minced)sea salt to taste
Directions
Toss all the ingredients in a mini food processor or blender, blend until smooth and creamy and ENJOY!

I did not have tahini and used almond butter as a substitution. Any nut butter could be substituted, but if you buy tahini try using it on toast or spread over whole wheat pancakes and enjoy!
