1lb small unpeeled red potatoes, cut into 1-inch pieces (approx 3 cups)2 1/2 cups (1 small bag) ready to eat baby carrots1 small white onion, cut into strips1 cup sliced fresh mushrooms6 boneless skinless chicken thighs (approx 1 1/2lb)1/2 tsp salt1/8 tsp pepper1 jar (12oz) fat free chicken gravy12oz frozen sweet peas in steamable packaging
1. In 4-5qt slow cooker place potatoes, carrots, onions & mushrooms. Sprinkle chicken with salt & pepper, place on vegetables in cooker. Pour gravy over top.
2. Cover & cook on low setting 8-10 hours
3. Steam peas in microwave per package directions & stir in right before serving
