Taboule Salad

Ingredients
1/2 cup boiling water1 1/4 cup dry couscous6 Tbsp olive oil1/3 cup lemon juice1 diced tomato1/2 diced green pepper1/2 chopped onion4 Tbsp parsley1 Tbsp of mint (optional)Salt & Pepper to taste
Directions
Makes 5 1-cup servings.
Mix 1/2 cup boiling water with 1 1/4 cup dry couscous. Add 6 Tbsp. olive oil and 1/3 cup lemon juice. Stire well. Cover and let sit for 5 minutes. Fluff with fork. Add 1 diced tomato, 1/2 diced green pepper, 1/2 chopped onion, 4 Tbsp. of parsley and 1 Tbsp. of mint (optional). Salf and pepper to your teaste. Toss lightly. Refrigerate for 15 minutes. Fluff with a fork and serve.
