Spanish Rice

Ingredients
16 oz. ground beef, 90% lean2 cups chopped red ripe tomatoes1 large onion chopped4 cloves garlic chopped1.5 cups brown rice, long grain5 cups beef bouillon (or 5 bouillon cubes and 5 cups water)
Directions
Cook rice and bouillon, or (bouillon cubes and water) on high in microwave for 25 minutes. While the rice cooks, brown beef, onions. garlic and tomatoes in a pan. Add partially cooked rice to pan and finish cooking on medium high until water is absorbed and rice is soft. Serve with your favorite veggie on the side.
