Dad's Walleye Fish Fry

Ingredients
1 c Bread crumbs (dry, grated, plain)4 T Bays Seasoning (The Baltimore Spice Co, Baltimore MD 21208)3 T Crisco shortening (for pan frying: I use a big griddle)8 Walleye Fish Fillets (frozen or fresh)2 lg eggs
Directions
Mix bread crumbs and seasoning for seasoning mix. Can start with frozen fillets. Dip fillets (frozen or thawed) in egg, then in seasoning mix while shortening melts on griddle. Use just enough shortening to keep fish from sticking or losing breading. Brown on both sides at med heat (10-15 min ea side). Cook until done (largest fillet will usually crack and split at the top).
