Dry Brown Rice 2.5 cupsBell Peppers, 1 red, 1 greenJalapeno Peppers, 2Yellow onion, 1 largeTomatoes, 2Chicken Breast, 1 lb.Black Beans, 2 cans (30 oz)Yellow Sweet Corn, 1/2 lb.Fresh Garlic, 3 clovesGround Cumin SeedCayenne PepperChili PowderSaltBlack PepperLime JuiceOlive Oil
Preheat oven to 350. Boil brown rice in water. Cut chicken breast into thin strips or small pieces, saute in a splash of olive oil and set aside. While the rice continues to cook, chop peppers (bell and jalapeno), onion, garlic, and tomatoes, and hand mix in a bowl with black beans, corn, and chicken. When the rice is cooked, add the rice and continue to mix, adding 1 tbsp olive oil, 1 tbsp cumin, 1 tbsp cayenne pepper, 0.5 tbsp chili powder, 1.5 tbsp lime juice, and 1 tbsp salt. When thoroughly mixed, spread into a large casserole dish, cover with foil, and bake for 75 minutes. Makes 12 portions.

This recipe was just ok to me. I wasn't crazy about it. I love spicy foods, but this dish had too much hot spice and not enough other flavor to it if that makes any sense. Some of the rice got a bit hard too. And, yes, it could use more chicken. Other than that it was worth trying out. - 3/20/10

Made this tonight; it was YUMMY! I used a little less cayenne. With that and the jalapenos it had just the right amt of heat. Needs more chicken tho. Only used one can of black beans and a full bag of frozen corn. Needs just a little more salt. Was yummy! Lots of good color to this dish, too! - 2/28/10
