Basic Mayonnaise

2 egg yolks1 teaspoon Dijon-style mustard2 teaspoons lemon juice1 tablespoons white wine vinegar1/2 teaspoon salt (or to taste)Freshly ground white pepper to tastePinch of cayenne pepper1 cup light olive oil
Put the egg yolks, mustard, lemon juice, vinegar, salt, pepper, and cayenne in the bowl of a food processor or blender. Briefly blend the ingredients, but they should be well blended. Add the oil gradually, in a very thin stream, wiht the processor (or blender) running. When all the oil has been incorporated, check the mayonnaise. If it is too stiff, close the lid, turn the appliance back on, and add about a tablespoon of hot water. Always refrigerate mayonnaise.
