Quinoa Burger

Ingredients
* 1-½ cup Quinoa, Rinsed And Drained * 1 whole Onion, finely chopped * 1 whole Carrot, Coarsely Grated * 1 whole Zucchini, Coarsely Grated * 4 whole Eggs * ⅓ cups Bread Crumbs * 1 Tablespoon Olive Oil * Salt And Pepper, to taste
Directions
1. Pour 1 1/4 cups of water into a pot, add the quinoa and bring to a boil. Cover, lower the heat, and cook for 15 minutes. Transfer to a bowl and add all the other ingredients..Season with salt and pepper.

2. Form 20 patties ( be sure your hands are slightly wet- it helps to form the patties tightly).

3. Heat the canola oil in a large Teflon pan on medium heat and saute the patties 2-3 minutes on each side until browned.

Serve warm or at room temperature. (We love them cold too!)
