Dairy Free Scalloped Potatoes

1 cup chopped onion, (1 large)2-3 cloves garlic, minced4 Tbsp. margarine (dairy free brand)1/4 cup flour1/2 tsp. black pepper1/4-1/2 tsp salt2 1/2 cup soy milk (or other type of dairy free milk)6 medium potatoes (about 2 pounds)
1. Grease a 9x13x2 inch pan, or a large casserole dish, and set aside. For sauce, in a saucepan, cook onion and garlic in margarine until tender, but not brown. Add flour, pepper, and salt. Add soymilk all at once. Cook and stir over medium heat until thickened and bubbly.
2. Thinly slice potatoes. Place half the sliced potatoes into the greased pan. Cover with half the sauce. Repeat potato and sauce layers.
3. Bake covered (foil over the 9x13 pan, lid on casserole dish) in a 350 degree oven for 40 minutes. Uncover, and continue baking another 30 minutes, or until the potatoes are tender. Makes 8-12 servings.
