CLEAN CREPES

Ingredients

1/2 C whole wheat flour1 whole egg1 egg white1/3 C nonfat milk1/3 C water1 tsp canola oil1/2 tsp vanilla extractSAUCE:4 Tbsp sugar free cherry preserves1/4 C orange juice1/2 tsp ground cinnamon
Take first six ingredients and mix in a glass bowl until smooth. Heat a small nonstick pan on medium high heat. Using a small ladle, pour batter into pan swirling about until a very thin layer of batter covers the pan. Cook for 2-3 minutes until firm and then flip and cook another 30 sec-1 minute. Place on a plate and keep warm until all crepes are made. Make sure between crepes that you mix the batter to keep the ,mixture smooth and prevent settling.
In a separate small nonstick pan, mix preserves, orange juice and cinnamon. Heat on low until smooth and sauce consistency. May need to add more orange juice as it cooks to create the consistency you desire.
When crepes are finished, take 1 Tbsp of cottage cheese and spread in the middle of your crepe. Roll up with fold end down. (COTTAGE CHEESE IS NOT FIGURED INTO THE CALORIC COUNT)
Pour 2 Tbsp of sauce onto each crepe. SERVE.
