Baked Salmon w/corn salsa (serves 8)

Ingredients
Corn Salsa: tomatoe, corn, cucumber, bell pepper, cilantro, red wine vinegar (I used red sherry vinegar), garlic powder, ground cumin, sal, blk pepper, and caynne peppersalmonsaltpepper(pg 184)
Directions
chop all vegetables, including cilantro. Add red wine vinegar and spices. Set aside (I put in frige)

Spray pan with cooking spray to avoid sticking. Put salmon in pan and sprinkle salt and pepper.
Bake salmon 450 degree 7 min each side, or until the salmon is done.

Serve salsa over the salmon (or let everyone put as they wish)
