Whole Grain Zucchini Bread Muffins

Ingredients
1 1/2 C. whole wheat flour1 t. baking soda1/2 t. baking powder1 t. cinnamonpinch salt2 large eggs1/2 C. splenda + 1/4 C. sugar1/4 C. unsweetened applesauce1/4 C. orange juice2 T. fiber one vanilla yogurt1 t. vanilla extractgrated zest of 1 orange1 to 1 1/2 C. grated zucchini spritzed with lime juice
Directions
1. Preheat oven to 350 degrees.
2. Spray muffin pan with oil.
3. Whisk together flour, baking soda, baking powder, cinnamon & salt in a medium bowl.
4. In a large bowl, beat the eggs and sugars until well blended. Beat in the applesauce, juice, yogurt, vanilla, and grated zest. Add the dry ingredients. Fold in the grated zucchini.
5. Evenly fill 12 muffin cups and bake approximately 25-30 minutes, until a toothpick comes out clean.

    I tried several recipes and this was the best! I only used the 1/2 c splenda and no sugar. I tossed in some flax seeds and dark chocolate chips, and made one batch with walnuts. I made these into loaves...and they taste way too good so portion control is harder! The orange added something special. - 7/25/12

    WAY TOO SWEET. The Splenda overpowered the rest of the ingredients and left a horrible after taste. I would try it again but cut the Splenda down significantly. - 4/22/12

    wowee!!! This is a great way to get rid of some overabundant zucchini from my garden (also makes neighbor points when I bake em up and give half away!) This makes 12 real muffins, not eensy weensy ones! I used egg substitute, added 1tbsp olive oil and handful of raisins. Tasty, filling, easy! - 7/23/11

    Really good and moist. I used a peach yogurt because that is what I had and used 1/2 c of applesauce and deleted the orange juice. This will be a great breakfast food the the rest of the week. DH loves them too! - 5/15/10
