Thai Basil Pork

Ingredients
1 tbs. olive oil1 clove garlic, minced1 shallot, thinly sliced1 bell pepper, diced (any color will work)2-3 boneless, skinless chicken breast, cut into thin strips1 jalapeno, cut into thin rounds2 tbs. hoisin sauce1 tbs. lime juice2 tbs. water8 basil leaves, roughly chopped1 tsp. ground gingerSalt and pepper, to taste
Directions
Heat a large skillet or wok over medium high heat. Add oil and heat until it begins to ripple. Season chicken strips with salt and pepper and cook in hot oil until lightly browned, about 5-6 minutes. Add in shallot, bell pepper, jalapeno, and garlic and cook until softened, about 5 more minutes.


In a small bowl, whisk together hoisin sauce, lime juice, water, and ginger. Add to the wok and stir chicken and vegetable mixture to coat. Reduce heat and continue cooking for 5 minutes to thicken sauce.


Serve over white rice.

*This dish would be equally delicious with any other protein, such as thinly sliced pork, beef or even shrimp (if you are a seafood fan).

    The list of ingredients doesn't match what's in the nutrition calculation. The listed ingredients shows chicken and doesn't include rice (it's mentioned in cooking instructions) but the nutrition info has pork instead of chicken and includes two cups of cooked rice. - 9/12/14

    This was awesome!! My entire family loved it!! Very easy to make! I am going to double the sauce, as it was delicious, and we may add more veggies like mushrooms, or just get a bag of frozen Oriental vegetables. It is super as is, just some suggestions from our family. - 3/18/11
