Oatmeal Apple Sauce muffins

Ingredients
1 cup of steel cut oatmeal1 cup of soy milk2 egg whites1/2 cup of apple sauce (unsweetened)1/2 cup brown sugar1 cup of whole wheat flour6 tbsp hemp seeds (hulled)6 tbsp chia seeds1 tsp baking powder1/2 tsp baking soda1/2 tsp salt
Directions
Makes 24 muffins

Soak the oats in the soy milk for about an hour.
Mix all dry ingredients seperately in another bowl.
Mix remaining wet ingredients into the oatmeal, then quickly mix all ingredients together, adding the cranberries last.

Pour into greased muffin tins and cook for 20 minutes in 400 degree oven (pre-heated)

Muffins will be heavy!
