Cucumber and Chicken Salad

1 Chicken Breast, Boiled and chopped1 Medium White Onion, Chopped1 Medium Cucumber with peel1/4 c unsalted peanuts1 tbsp Sesame seeds1tbsp Sesame oil (I prefer toasted, but any will work)1 tbsp rice vinegar1/4 c fresh lime juiceSalt and pepper to tasteOptional--Red pepper flakes
1. Remove the seeds from the cucumber and chhop or dice to a size that you prefer. I cut thin 0.5 in strips.
2. Mix finely chopped onion, cucumber, and chicken together in a medium sized bowl.
3. Using a mortor and pestle grind peanuts with seasame seeds.
4. Whisk together vinegar, oil, and lime juice. Add salt, pepper, peanuts and sesame seeds.
5. Mix dressing with salad and toss to coat. Top with red pepper flakes if desired.
This is a nice light salad on its own or serve with Buckwheat soba noodles and soba sauce for a complete meal.
