Veggie Patties

3 tablespoons diced red onion2 tablespoons diced black olives2 tablespoons diced red bell peppers1 teaspoon diced jalapeno1 1/2 tablespoons diced garlic1 tablespoon diced artichoke4 ounces black beans, drained4 ounces chickpeas, drained4 ounces white beans, drained6 ounces rolled oats1/2 teaspoon Hungarian paprika1/2 teaspoon chili powder1 teaspoon dried oregano1 tablespoon minced fresh parsley leaves1/2 teaspoon red chili flakes1/2 teaspoon ground cumin1/2 teaspoon celery salt1/4 teaspoon ground sage2 tablespoons seasoned bread crumbs1/4 cup egg beaters2 tsp olive oil, divided
In a medium saute pan over medium heat, add 1-tsp olive oil and all raw vegetables except beans. Saute until translucent. Remove and cool.
Grind Oatmeal in blender until much smaller, but not to flour consistency.
Coarsely mash beans with a fork.
Add veggies to beans and mix thoroughly. Add all dry ingredients along with the egg beaters. Thoroughly mix all ingredients and form into 4 patties, cover and refrigerate for 30 minutes.
In saute pan add 1 tsp olive oil, and cook patties 2 to 3 minutes per side.
Serve on Whole Grain Bun w/lettuce, tomato and onion.
