Almond rice pudding/ dairy free

1 cup short grain or aborrio rice2 1/2 cups water2/3 cup almond milk or rice milk1/3 cup sugar or 1/4 cup agave syrup1 tsp. vanilla1/2 raisins and currents2 tbs or more cinnamon
1. In saucepan, bring rice and water to boil, cover and simmer for 15 minutes.
2. Add almond milk, sugar (agave syrup) vanilla and raisins. Bring to a boil and simmer until almost all the liquid has been absorbed. Sprinkle with cinnamon and serve.
