Mushroom and swiss cheese quiche

Preheat oven to 375'F
Pierce pie crust with a fork and place it in the middle of the oven and bake for 10 min.
Meanwhile cook shallots in butter for 2 min, then add sliced mushrooms and saute for 10 min.
Beat eggs, add 1/8 tsp of salt, pinch of nutmeg and white pepper. Add 1.5 cup of nonfat milk, mix well. Add half of the Swiss cheese to the egg mixture. Pure half of the mixture in the pie crust, spread mushrooms evenly on top, add remaining egg mixture, sprinkle remaining cheese. Bake for 40-45 mi.
Note: Because this quiche is non fat milk based it will be very light and soft. Bake for longer if you prefer.
* Swiss Cheese, .7 cup, shredded (remove)
