Sausage and Egg Breakfast "Muffins"

Ingredients
1 1/2 c. Egg substitute (eggbeaters)6 large eggs12 Morning Star Farms Sausage Patties1/2 c. chopped onion1/2 c. chopped mushrooms1/2 c. dices peppers, yellow, red, green1 c. chopped fresh spinach1 c. shredded Swiss cheese
Directions
Preheat oven to 350* F.
Mix all ingredients EXCEPT the sausage patties, in a bowl. Spray a 12 cup muffin tin with olive oil. Place 1 sausage patty in each muffin tin and pour the egg mixture over each patty evenly. Bake for 30 mins. Cool and serve.

Makes 12 servings at 171 cals each.
