Tilapia Spinach

2 - 4-6 oz. Tilapia Fillets1 Bag of Fresh Baby Spinach2 Tbsp. Olive Oil1-2 Garlic Cloves2-3 Tbsp. Four Cheese Tomato Sauce for each filletItalian Seasoning PowderAsiago Cheese, grated
Preheat oven to 425. Rinse fillets, spray baking dish with Pam Spray, press Italian Seasoning in each side of fillets and place fillets in baking dish.
Spoon Sauce over fillets, sprinkle with Asiago Cheese. Bake in oven 10 - 13 minutes til done. While fillet are baking, heat olive oil in skillet on top of stove with crushed garlic cloves, when oil is hot, drop large handfuls of spinach into oil and stir. Continue to add spinach as it cooks down to nothing really quickly. Scoop cooked spinach to middle of plate and place baked fish on top, Make attractive and delicious meal. This is not an original recipe of mine but is one I use often. Makes two servings.
