230 grams peas2 medium onions, chopped2TB olive oil1tsp tumeric1 tsp coriander powder1/2 tsp chili powder1/2 tsp cumin powder1 tsp saltLarge bell pepper (aprox 1 1/2 cups), chopped5 clove garlic, chopped375 grams tofu, chopped into cubes330 ml Coconut milk
Prep time can overlap with cooking time.
On a medium heat, cook the spices in the olive oil to make a nice aromatic paste. Add the chopped onions and cook, stirring occasionally until the onions start to become mushy. Then add everything else (EXCEPT FOR THE COCONUT MILK!) and stir it all in together. Let simmer for about 30 minutes. Then turn the heat off, stir in the coconut milk and let stand 5-10 minutes. Best served with basmati rice.
