Ham, Potato, Onion and Red Pepper Cheddar Fritata

Ingredients
1/2 cup egg beaters1/2 cup sauteed onions and red peppers1/2 cup diced lean ham1/2 cup chopped cooked potato (think leftovers) 1 tbsp smartbalance omega1 slice 2% cheddar cheese
Directions
Preheat oven to 400, put spread in a small 8 inch iron skillet over med-high heat until melted and sizzling, reduce heat to med. Meanwhile, set cheese aside and mix remaining ingredients. Pour egg mixture into hot pan, cook until almost set, cut cheese slice into shreds and arrange on top. Bake until set and cheese is bubbly.

    I used this recipe for my first frittata. I did not use ham or the suggested cheese. I had some feta and parmasen cheese and we both really liked it. I will make again and just put in what I have. - 2/5/11

    Yum! Made this for lunch today. I left out the ham (lent) and added some lite feta. I'm a big fan of frittata because it's so versatile, quick and easy. - 2/26/10
