Baked Salmon with Tomatoes and Capers for Two

Atlantic Salmon Fillets, 6 oz.1 Tbsp Extra Virgin Olive Oil, dividedJuice of 1 Fresh LemonKosher Salt (optional) and Fresh Ground Pepper to taste1 Clove Fresh Garlic, thinly sliced1 Tbsp Fresh Grated Ginger Root2 Plum tomatoes, sliced1 Tbsp Capers
Preheat oven to 375 degrees. Rinse and pat dry salmon fillet with paper towels. Pour half of the olive oil into the bottom of a small baking dish, and place the salmon skin side down in the dish. Sprinkle top of fillet with lemon juice and brush with the remaining olive oil. Season with salt (if desired) and pepper, and top with sliced fresh garlic and grated ginger root. Arrange tomato slices on top to cover the entire fillet, sprinkle with capers, and bake for 20 to 25 minutes, or until fish is easily separated with a fork, but not dry.
