Italian Baked Penne and Chicken

1 package Penne (or other small pasta)2 tbs olive oil6-8 chicken thighs, deboned and skinned, diced1 medium onion, diced3 cloves garlic, diced2 (14.5 ounce) can diced tomatoes with juice1 cup crimini mushrooms, sliced1 cup mozzarella cheese1/4 cup parsley, chopped1/2 tsp sea salt1/4 cup Panko bread crumbs1/4 cup Parmesan cheese, grated
Preheat oven to 400 degrees F.
Cook and drain pasta al dente. Put into a large mixing bowl.
Put olive oil in a large saute pan on medium high. Saute the chicken pieces and cook until cooked through. Add the onions, garlic and mushrooms and cook for 5 minutes, then add to the pasta bowl. Add the tomatoes, mozzarella, parsley and salt. Mix. Spray a casserole dish with cooking spray, then pour the chicken and pasta mixture into it. Sprinkle the Pamesan and bread crumbs over the mixture. Bake until the top is golden brown, or about 35 minutes.
