ETNT Roast Pork Loin

Ingredients
3 Cloves of GarlicOrange Zest of 2 Oranges1 T Fennel seed1.5 T Rosemary (fresh)1 T Olive Oil2 lb Pork TenderloinSalt and Pepper to taste
Directions
Preheat the over to 450. On a cutting board, combine the garlic, orange zest, fennel seeds, and 1 T of the Rosemary. Run your knife repeatedly through the mix until it befins to take on a pastelike consistency. Scoop it up into a bowl and ad the olive oil. Season the pork with salt and pepper, then rub it all over with the paste. Either marinate for 4 hours in fridge or cook immediately. Lay the pork in a roasting pan and roast for 25 to 30 minutes until an instant-read thermometer inserted into the middle reads 150 to 155. Remove from the oven and allow to rest for 10 minutes before slicing.

    Fennel Flavor way too strong! Would cut that and orange zest in half if I were to make again! Other than that was good. - 8/6/12
