Creamy Polenta with Vegetables

8 oz of mushrooms stemmed and sliced thin1 10oz package frozen peas, thawed1/2 cup Sauterne cooking wine1 tsp onion powder1/2 tsp garlic powder1/2 tsp pepper2 tsp salt4 cups waterI cup instant polenta3 Tbs grated Parmesan cheese
Spray skillet with nonstick spray and set over medium high heat. Add the mushrooms and cook until soft about 2 minutes. Add the peas and cook for 1 minute. Add the cooking wine and bring to a boil, cook until it reduces some, 1 minute.
Stir in pepper and 1 1/2 tsp of salt.
Meanwhile, in a sauce pan bring the water and 1/2 tsp salt to a boil. Add polenta in a stream then stir in parmesan.
Stir constantly until thick and creamy, about 5 minutes.
