Mandarin Almond Holiday Salad

Ingredients
1/2 cup sliced almonds3 T sugar1 head romaine lettuce2 cups chopped celery hearts20 oz. Mandarin oranges, drained (I used 15 oz can of Dole's)4 stems green onion, finely diced1 - 0.7 pkg dry Italian dressing mix3 T fresh lemon juice3 T white grape juice concentrate2 T fresh parsley, minced1/3 cup water1/4 cup light olive oil (I used reg for the calorie calculation)3 T honeyCook almonds with sugar in a dry skillet until sugar melts and coats almonds. Emove from heat and set aside to cool. Toss salad ingredients together. Mix dressing together in air-tight container and shake well.Just before serving shake dressing again and toss with salad, top with almonds.
Directions
10 servings if used as a side salad. Add some grilled chicken, and you could make a nice meal out of this.
