Light Coleslaw

Ingredients
1/2 head medium to large cabbage finely choppedDressing:2 tbsp rice vinegar1 tbsp water1 tbsp Splenda1 tsp Goulden's mustard2 tbsp extra virgin olive oil1/4 tsp celery seed1/8 tsp salt
Directions
Cut the head of cabbage in half. Wrap and store one half. Cut the core out of the remaining cabbage half then finely chop the cabbage to create a slaw.

Mix the remaining ingredients in a bowl and wisk well.

Pour the dressing over the slaw and mix well.

I find that it is good to prepare this dish first then continue with the preparations of the meal, this allows the flavor of the dressing to blend well with the cabbage.
