Ingredients
12 boneless skinless chicken thighs1 large red onion, sliced3 green bell peppers, quartered6 med red potatoes, halved1/2 Tbsp kosher salt6 plum tomatoes, halfed1 tsp. dried thyme1 tsp. dried oregano1/2 tsp. red pepper flakes7 Tbsp olive oil6 tsp. dijon mustard1 tsp. black pepper
Directions
Place all ingredients in roaster. Stir and roast at 500 degrees for one hour. Makes 12 servings.
