Carmalized Onion & Spinach Cheesy Egg Bake

Ingredients
2 T. butter2 T. olive oil2 large onions, sliced3 cups baby spinach leaves6 large eggs1.25 cups of all white egg substitute2 cups non fat milk2 cups low fat cottage cheese2 cups crumbled feta cheese6 ozs. low fat cream cheese1/2 cup flour1 T. baking powder1 T. tumeric1 T. garlic powdersalt & pepper to taste2 cups shredded swiss cheese
Directions
Preheat oven to 350 degrees.

Heat heavy pan over medium high heat. Melt butter and add olive oil. Carmelize onions in butter and olive oil. Stirring occasionally. Remove pan from heat and add spinach cooking it down. Place onions and spinach in a 9x13 pan. Sprinkle crumbled feta cheese over the top. Place cubed low fat cream cheese evenly over top.

Mix eggs, egg whites, milk, cottage cheese, flour, baking powder, spices, salt and pepper to taste in a large mixing bowl. Mix well.

Pour egg mixture over veggies and cheese in 9x13 pan. Bake in preheated oven for 45 minutes. At the end of 45 minutes, sprinkle shredded swiss cheese over the top of the casserole. Turn off the oven and return casserole to oven and allow cheese to melt and casserole to rest. Serve. Makes 24 servings.
